Granola Bars

 

Ingredients: 2 cups old fashioned rolled oats

1/2 cups raw sunflower seeds

1 cup sliced almonds

1/2 wheat germ

1/2 cup honey (orange blossom)

1/4 packed dark brown sugar

1 ounce unsalted butter (plus a little extra for greasing the pan)

2 tsp vanilla extract

1/2 tsp kosher salt

6 1/2 ounces chopped dry fruit  (any combination of cherries, blueberries, apricots)

 

Pre-heat oven to 350 degrees

Butter a 9x9 inch glass baking dish and set a side

 

On a sheet pan, spread out sunflowers seeds, wheat germ, almonds and oats. toast in oven for 15 minutes stirring occasionally

 

In a medium sauce pan, combine honey, brown sugar, butter, vanilla and salt, place over medium heat. Cook until brown sugar has dissolved completely

 

Once oat mixture is done, remove from oven and reduce heat to 300 degrees. Add the oat mixture to the honey mixture, and add dry fruit. Mix well

Turn out mixture into the greased glass pan.  Lay a piece of wax paper or parchment paper over the top as you press down and evenly distribute the mixture in the dish.   Bake for 25 minutes.

When finished baking, set baking dish on a cooling rack and allow to cool completely.  

Once cool cut into squares.
