|Ingredients:||3 Tbsp unsalted butter
1 small onion (minced)
1 medium carrot (peeled and minced)
1 (28 ounce) can diced tomatoes
2 Tbsp fresh basil or parsley (minced)
1/4 cup heavy cream
1/2 tsp salt
Melt butter in in medium sauce pan. Add onion and carrot, cook over medium heat until soft, but not brown (approx 10 minutes).
Stir in tomatoes and their juice, add salt. Simmer until thickened slightly (approx. 10 minutes).
Stir in basil and cream. Serve over Ravioli.
