RACK OF LAMB

 

Ingredients: 1(2 lb) lamb rib roast or 2 (1 lb each) lamb rib roasts, trimmed
cup Kikkoman soy sauce
3 tbsp peach jam or preserves
1 clove garlic minced
tsp dried thyme, crumbled

    

Preheat oven 325 degrees

Place lamb, trimmed side up on a rack in a shallow, foil lined roasting pan.
Roast for 35 minutes. Meanwhile, blend other ingredients.


Drain off excess fat from roasting pan. Brush lamb thoroughly with soy sauce mixture. Return to oven and roast 25 minutes longer or until meat thermometer in the thickest part of the meat reads 160 degrees for medium doneness. BRUSH MEAT WITH SOY SAUCE MIXTURE EVERY 10 MINUTES.

When done, remove to serving platter and wait 10 minutes before carving.
