Brown Rice-Crispy treats


Ingredients: 6 cups puffed brown rice

3 tbsp flax seed oil plus extra for the pan (if you can't find flaxseed oil, you can use safflower oil)

1 tbsp honey (orange blossom)

4 cups mini-marshmallows

3/4 cup slivered almonds

1/3 cup coarsely chopped dried cranberries

1/3 cup coarsely chopped dried cherries

1/3 cup dried blueberries


Pre-heat oven to 425 degrees

lightly coat the inside of a 13x9x 2inch deep metal pan with oil and set aside


On a sheet pan, spread out puffed brown rice, toast in oven for 4 minutes stirring occasionally


In a medium sauce pan, combine honey, brown sugar, butter, vanilla and salt, place over medium heat. Cook until brown sugar has dissolved completely


place oil, honey and marshmallows in a large mixing bowl and set over a pot of simmering water.  Stir until marshmallows are melted (approx. 4-5 minutes)


Once marshmallows are melted, add the toasted rice, almonds, and fruit. Stir to combine. Coat your hands or spatula with oil and spread evenly into pan (you can also use a lightly oiled piece of way paper or parchment paper)  and press down.

Once cool cut into squares.
