AUTUMN PORK TENDERLOIN

 

Ingredients: 2 LBS PORK TENDERLOIN
1 TSP SALT
TSP PEPPER
1 CUP APPLE JUICE

DRESSING
2 CUPS APPLE PIE FILLING
CUP RAISINS
CUP CHOPPED PECANS
TSP GROUND CINNAMON

    

pre-heat oven to 400*


Rub salt and pepper on tenderloin.


Place in large resealable bag and cover with apple juice, seal bag and turn to coat.


Refrigerate for at least 30 minutes.


Drain the apple juice and place tenderloin on roasting rack in a roasting pan.


Combine apples, raisins, pecans and cinnamon and spoon over pork.


Bake uncovered for 40 minutes or until thermometer reads 160 degrees


Let stand for 5 minutes before carving
